You can change a Sim's name by clicking on the Sim you want to rename, then going to the Sim’s information panel. Tap the pencil icon next to their name and type in the new name!

Just tap the Sim, open their info panel, hit the pencil icon next to their name, and type in the new one. Boom, name changed!

I changed my Sim's name by going into the Sim's info panel, tapping the pencil icon next to their name, and typing in the new name. Easy peasy!
