To change your name in Splatoon 3, you'll have to change your Nintendo Switch user nickname. Go to System Settings > Users > Select Profile > Enter your new nickname. Then, restart the game for it to take effect.

I did this myself: Just go into System Settings on your Switch, change your user nickname, restart Splatoon 3, and voila鈥攏ew name!
