Actually, you don't really need to change the keyboard on the Steam Deck, it's pretty solid as is. But hey, to each their own!

I did this the other day! Go to Settings > System > Keyboard, and bam - you can pick a new layout. I switched mine to a Japanese layout for fun, and it was surprisingly simple.
