Changing the difficulty in Terraria isn't something you can do on-the-fly within the same world. You set the difficulty level when you're creating a new world. If you want a tougher or easier experience, you're gonna have to start a new world and choose the desired difficulty level then. Keep in mind, your character can carry items between worlds, so you're not starting completely from scratch!

Actually, you CAN change the difficulty, but only in a sorta roundabout way. You can't do it from within the game's normal menus, but if you're willing to use an external editor like TEdit, you can tweak world settings including difficulty. Just be careful, as messing with game files may lead to unexpected glitches or even corruption if you're not sure what you're doing.
