Just break the union up, recolor the parts, and re-union them. It's a bit of a hassle, but it works.

Select the union, go to the Properties window, and tweak the Color3 value to get the shade you want!

Actually, you only need to adjust the BrickColor property in the Properties panel when you have the union selected.

You can't change the color of a union directly. Instead, you'll need to un-union the parts, change their colors, and then re-union them.
