Can't. Game doesn't let you change it whenever you want. You got to use a bed and 'wait' it out.
Changing the day in Hogwarts Legacy is super easy! Just head to the nearest bed you can find in the game. Your character's room in Hogwarts has one, or any of the safe houses around the map. Interact with the bed, and you'll get an option to 'Wait' which lets you advance time. You can choose to wait until morning or night, depending on what you need for your quests or just to soak in the vibes of Hogwarts at different times!
Been playing since release and changing time by sleeping is not just useful for quests but also changes how beautiful the world looks. Night time in Hogwarts? Absolutely magical, no pun intended.
