You have to change your phone's language setting. There's no separate language setting in WhatsApp itself.
From my experience, just update your device's language settings. WhatsApp will switch to that language without any extra steps.
Go to your phone's settings, find the language options, and pick your new language. WhatsApp will automatically update to match.
