You can change the resolution in Roblox by going to the in-game settings. Just hit ESC, click on the Settings tab, and adjust the 'Graphics Mode' and 'Graphics Quality' to find the resolution that works best for you!

You can't actually change resolution directly in Roblox. Your screen's resolution is what you get in-game. Try adjusting fullscreen/windowed mode if needed.

First-hand tip: Hit ESC in-game, click Settings, and then play with the Graphics Quality slider. I found setting it to 'Automatic' helps Roblox figure out the best resolution for my machine!
