Just changed mine last week! Go to your profile, hit 'Settings', then 'Security and Privacy'. Find the email section, edit to your new email, and don't forget to verify it!
Go to your Twitch settings by clicking on your profile picture at the top right, then select 'Settings'. Under the 'Security and Privacy' tab, you'll see 'Email'. Click 'Edit', enter your new email, and confirm it through the verification email they send you!
