I've done this before by editing the game's save file. Open the save in a text editor, find the 'fun' variable, change it to what you want, and save it. Make sure to back up your original save file just in case!
You can tweak the fun value by editing the file named 'undertale.ini' in the game's installation directory. Look for the 'fun' attribute and change its value, but don't go too wild with it! ;)
