I've done this a bunch. Grab UndertaleModTool, extract the sprites, and open them in any image editor like GIMP or Photoshop. Save your changes and reinsert the sprites. Have fun!
Super easy! Just use UndertaleModTool to extract the sprites you want to change, edit 'em in your favorite image editing software, and reinsert them. Bam, new sprites!
You really shouldn't be messing with the game files like that. It can break your game.
