The easiest way is to edit the config file directly. Go to the game’s directory, find 'vampire edemption es' and open 'autoexec.cfg' with Notepad. Change the width and height values to whatever you want.
For real, just snag the unofficial patch. Not only will it let you easily change resolution, but it’ll make the game run smoother overall.
