I tried changing the interior of my villager's house by gifting them tons of furniture, and guess what? One of them actually used the bed I gave them instead of their original one! So, it might not be an 'official' method, but gifting them stuff they might like seems to work sometimes.

Nah, you can't really change a villager's interior directly. The game doesn't allow that level of customization. Villagers kinda do their own thing.
