Open your backpack from the main menu and drag the weapons you want to your character's loadout slots.

Bring up your loadout by pressing comma (,) and change your weapons from the menu before you respawn.

You can't change weapons mid-game. Plan and equip your loadouts wisely before jumping into battle! (Seriously, it makes a difference!)
