You can change which monitor is your primary by right-clicking on your desktop, going to 'Display settings,' and then selecting the monitor you want to use as your primary display. Just make sure to apply the changes, and your Steam games should start opening on that monitor!

Just drag the game window to the monitor you want it to open on next time. Some games remember the last monitor they were on, so this might work. If not, the primary monitor trick mentioned earlier is your best bet.
Honestly, it's all about setting your primary monitor in Windows. Steam doesn't let you pick a monitor per game, which is a bummer.
Just launch the game, switch it to windowed mode, move it to your preferred monitor, then switch back to fullscreen. Works like a charm for me!
