How to Change Which Monitor Steam Plays Games On
Honestly, just drag the game window to the monitor you want to use. If it's windowed, this is the quickest fix. Fullscreen might not play nice though.

Easy, just go into the game's settings and look for a display or graphics option. Most games let you choose which monitor to use directly from there. If there's no option, try setting the monitor you want to use as your main display in your computer's display settings. Works like a charm!
Changing the main display is overkill. Use windowed mode and move the game to your desired screen. Then, switch to fullscreen. Not perfect, but it's a workaround.
Right-click on your desktop and go to 'Display settings'. Set your preferred monitor as the 'main display'. Boom, Steam games will default to that monitor. Simple as that.
