Easy peasy! Just sign in to Xbox Live on your Xbox 360. Then, go to 'Social'. Select 'Sign-In or Out,' choose your profile, and hit 'Edit Profile.' From there, select 'Gamertag' and follow the prompts. Heads up: Microsoft may charge you for the change!

You can do it from the Xbox website too. Just log in, go to your profile, and select 'Change Gamertag.' Simple as that!
