You can't directly 'change' your gym like switching teams, but you can battle and take over a gym from another team.
Just walk up to the gym, battle the Pokémon stationed there, and if you win, it’s yours! Go Team Mystic!
Take over a gym by defeating its defending Pokémon. Once you've kicked them out, you can put your Pokémon there.
Changing gyms isn't a thing. But you can challenge other teams and take control of their gyms. Team Valor for the win!
