You can't directly 'change' your gym like switching teams, but you can battle and take over a gym from another team.

Just walk up to the gym, battle the Pokémon stationed there, and if you win, it’s yours! Go Team Mystic!

Take over a gym by defeating its defending Pokémon. Once you've kicked them out, you can put your Pokémon there.
