You need to edit the save file! Find the file in the game's directory and change the 'Max HP' value. Be careful tho, backup your save first!

You can't officially change your health without mods or cheats. Play the game as intended, it's more fun that way!
I used a save editor once. Open the file with a text editor, find the 'name' followed by 'hp,' and change the value. Worked like a charm.
Just don't get hit! Easiest way to keep your health high!
