To change your name, you gotta reset your save file. Just head to the game's title screen, select RESET, and start a new adventure with a fresh name!

No official way to change your name without resetting the game. Just start over if you really need that new identity!

From my experience, the only way to change your name in Undertale on the Switch is by resetting your save file. Did it myself, and it works like a charm!
