Just do it on your PC or phone via the PlayStation website! Log in, go to Account Settings, and change your Online ID. Easy-peasy!

I changed mine last week! Open Settings on your PS5, then go to Users and Accounts. From there, select Account > Profile and Online ID. Follow the prompts. It might cost a few bucks if it's not your first time changing it.
