Your best bet is to change your name on Facebook if your Tinder account is linked through it. Tinder will update your name from there.
Currently, Tinder doesn't allow you to change your name directly within the app. But, you can unlink your Facebook account, change your name on Facebook, and then relink it. Alternatively, create a new Tinder account with the desired name.
Speaking from experience, I changed my name on Facebook to update it on Tinder. Worked like a charm.
