In Super Mario Maker (especially the original on Wii U), just keep shaking the hand on the screen until it changes! It's random, but it works.

Honestly, just shake the Wii U GamePad like an etch-a-sketch. It worked for me!

If you're playing Super Mario Maker 2, head to the Course Maker settings, and you should see an option to change the hand appearance.

Try holding down the stylus for a few seconds on the touch screen. Sometimes it triggers a change!
