To change your wallpaper, head to the 'Settings' tab, choose 'My Xbox,' then 'My Profile.' From there, select 'Themes' and pick your desired background. Easy peasy.
You can change it by going to Settings -> My Xbox -> My Profile -> Customize Profile -> Change Theme. Choose your preferred theme, and voila!
