If you want more detailed stats, Steam Charts (steamcharts.com) is a goldmine for seeing a game's player count over time. It's not an official Steam tool, but it's super accurate!
I check Steam Charts before buying any game. Seeing if a game's player base is growing or shrinking tells me if it's worth my time.
