You can check your V-Bucks history by logging into your Epic Games account on the Epic Games website, going to the 'Account' section, and clicking on 'Transactions'. You'll see all your V-Bucks purchases and spends there!

Just log in to your Epic Games account, head to 'Account' > 'Transactions', and voila! All your V-Bucks history will be there!
