Corner camping works like a charm. Place your units in a corner of the map, so the AI can only attack from one direction. Stack those defenses!

Use skirmishers and fast units to kite enemy forces. Hit and run tactics frustrate the AI, making them chase you endlessly while you pick them off.

Honestly, just spam artillery and ranged units. The AI often doesn't handle them well, and you can destroy their forces from a distance easily.

One word: choke points. Lure the AI into narrow passages where they can't use their numbers against you. Use artillery and range to obliterate them!

I've found that using a wall of cheap infantry to soak up enemy charges while my archers and artillery do the real damage is super effective. It makes the AI line up perfectly for a beating.
