To pick an Eevee evolution in Pokémon GO, rename your Eevee before evolving: use 'Pyro' for Flareon, 'Rainer' for Vaporeon, 'Sparky' for Jolteon, 'Sakura' for Espeon, 'Tamao' for Umbreon, 'Linnea' for Leafeon, 'Rea' for Glaceon, and 'Kira' for Sylveon. This works once for each evolution.
