To clear tracked items in Starfield, just head to your inventory, select the item that's currently tracked, and toggle the tracking option off. Easy peasy!

You can't actually clear tracked items; it just makes you think you can.

From personal experience, just go into the map, and disable tracking from there. Worked for me every time!
