In Spyro, you need to learn climbing from a certain character. Head to the Summer Forest world and visit Moneybags in the Autumn Plains. Pay him 500 gems, and you'll be able to climb walls by walking up to ladders and pressing the jump button.

It took me ages to figure out, but all you gotta do is find Moneybags in the Autumn Plains and buy the climbing ability for 500 gems. Then approach ladders and jump.
