Alt + F4 does the trick! Immediate exit, no questions asked.
If you're feeling dramatic, just shut down your PC. Undertale can't stay open if there's no power, right?
Get to a save point, save your game, and then hit 'Esc'. Undertale will ask if you want to quit, and then you just confirm.
On a console? Just press the Home/Guide button, navigate back to the system menu, and close the game from there.
