Just keep trying! The learning curve is steep, but once you get the hang of the controls, you'll nail it. And remember, if at first you don't succeed, skydiving is not for you... or in this case, maybe just reload the save.
Fun fact: I actually learned to fly (in-game) just because of this mission. My secret? Lower the sensitivity for better control and use the rudder controls sparingly. Smooth is fast, and fast is smooth. Patience is your co-pilot here.
