Honestly, it's easier to just use a more recent controller, like the PS4's DualShock 4, which has native iPhone support. Save yourself the hassle!

I’ve done this before! You need a computer, a micro-USB cable, and an app like SixaxisPairTool. Once you’ve paired your controller with the app on the computer, connect it to your iPhone via Bluetooth. Took me a while, but it works!
