Frustratingly, the Xbox Series X controller doesn't natively support Bluetooth audio. You can, however, use a Bluetooth transmitter plugged into the controller's 3.5mm jack to connect your AirPods!

I tried this myself: Get a Bluetooth transmitter that plugs into the controller's headphone jack. Then, pair your AirPods with the transmitter. Works like a charm!
