You can connect earphones to the PS3 by plugging them into the audio jack on your TV or AV receiver. If you want to use a Bluetooth headset, go to 'Settings' > 'Accessory Settings' > 'Manage Bluetooth Devices' > 'Register New Device' and follow the prompts to pair it with your PS3.

I personally use a USB to 3.5mm adapter for my wired earphones. Works great and only cost me a few bucks!
