Perosonally, I linked mine by going through the game settings on my console instead of the app. Worked perfectly!

Go into the Companion App’s settings, find 'Twitch', hit 'Link Account', and log in to your Twitch. Easy peasy!

Don't overthink it. Just find the 'Link Twitch' button in settings, and follow the instructions. Takes 2 minutes.
