First, you gotta turn on your PS3 and your Bluetooth headset. Then head to Settings > Accessory Settings > Manage Bluetooth Devices. Click on 'Register New Device', let your PS3 find the headset, select it, and enter the passkey '0000' when prompted. Done and done!

As someone who's done this a zillion times, here's the deal: Turn on both your PS3 and the Bluetooth headset. Go into Settings > Accessory Settings > Manage Bluetooth Devices on the PS3. Hit 'Register New Device', and the PS3 will search for your headset. When it finds it, select and enter '0000' as the passkey. You're good to go!
