You can connect a PS3 controller to your iPhone using a special software called SixaxisPairTool on your computer. Once you've downloaded that, connect your PS3 controller to your computer via USB, open SixaxisPairTool, and copy your iPhone's Bluetooth address into it. Finally, pair the controller to your iPhone via Bluetooth settings!

I managed to connect my PS3 controller to my iPhone by using SixaxisPairTool on my PC. It took some fiddling, but once I had the Bluetooth address synced, the controller paired up just fine with my iPhone!
