Just go to Settings > Accessory Settings > Manage Bluetooth Devices > Register New Device. Get your headset in pairing mode, then follow the on-screen instructions!

Easy peasy! Hit 'Settings', then 'Accessory Settings', and 'Manage Bluetooth Devices'. From there, select 'Register New Device' and make sure your headset is in pairing mode.

Why not just plug it in via USB? Works for me every time.

From personal experience, I found that putting my headset in pairing mode first helps avoid any issues. After that, it's smooth sailing through the PS3's 'Accessory Settings'.
