Can't do it directly with HDMI. Capture card's your best bet.
You'll need a capture card like the Elgato HD60. Plug the PS3 into the capture card via HDMI, then connect the capture card to your MacBook Pro via USB.
I tried this before and got a capture card to work. It's the only real option.
