I traveled a lot with my PS3. Just go to Internet Connection Settings, pick Custom, and then Wireless. Choose the SSID of the hotel and make sure you manually enter any login credentials if needed. Sometimes hotels require going into their browser login page to fully connect.

Here's a quick guide: Open your PS3's main menu, head to Settings > Network Settings > Internet Connection Settings. Select 'Easy' then choose the hotel WiFi network. You might need to open a web browser on the PS3 to enter the WiFi login details. Happy gaming!
