You can connect your wired headset through the AV Multi Out port on the PS3 using a 3.5mm audio cable with RCA connectors. Just plug the red and white RCA ends into the corresponding audio-out ports on the AV cable, and the 3.5mm jack into your headset!

Grab an RCA to 3.5mm female adapter and connect it to the AV cable. Then plug your headset into the adapter. Voila, wired audio!
