Controlling a helicopter in GTA San Andreas can be a bit tricky at first, but it's all about practice! Use the numpad on your keyboard: 8 and 5 to control pitch (front and back), 4 and 6 to steer left and right. Throttle up and down with the '+' and '-' keys. Remember to take it slow; the physics can be a little wonky at times. Once you get the hang of it, you'll be flying like a pro!
