Hey there! Unfortunately, the Xbox Series S doesn't have a disc drive, so you can't convert your physical disc games directly to digital. Your best bet is to check if those games are available for purchase digitally on the Microsoft Store!
From experience, I had to re-purchase a few of my favorite games digitally. It's not ideal, but the Series S really excels with quick load times and performance with those digital versions.
You might also want to see if any of your disc games are part of Xbox Game Pass. That way, you can just download and play them without needing the physical disc.
What you can do is trade your disc games for digital codes at some retail stores or online services. Check out your local game shop for trade-in deals.
