Screenshot the post and use an OCR app to extract the text. Works like a charm for me!
Use a browser! Open Instagram in a browser, right-click the text, and select 'Copy.' Easy peasy!
You can use an app like Universal Copy on Android to copy the text directly from the Instagram app.
