Just click the left stick (L3) on your PS4 controller, and your character will crouch down. Super handy for sneaky missions or if you're just trying to hide from the cops for a bit.

Pressing L3 isn't actually crouching, it's more like stealth mode. But, yeah, it's as close as you get in GTA 5. Real crouching isn't a thing, so stealth mode is your go-to for being sneaky.
