Just tap on your profile > Settings > Account > Deactivate account. Easy peasy, lemon squeezy!
It took me a while to find it too! Go to your profile, hit the three lines on the top right, select 'Settings,' then 'Account,' and finally 'Deactivate account.' You'll have to enter your password to confirm.
You can't deactivate your Instagram account directly through the app. Use a web browser instead.
