First, log in to Instagram from a computer (not the app). Go to your profile, click Edit Profile, and at the bottom, you'll find the option to disable your account temporarily. Confirm, and you're good to go!
You can't do it from the app. Use a browser, go to profile settings, and look for the option to disable temporarily. Options are limited!
