Lol, just hit the button you'd use to jump off a bike. It's the universal 'I wanna get off this ride' button in San Andreas.
Pressing the 'jump' button once should do the trick. If you're on PlayStation, that's the Triangle button. On Xbox, hit the Y button. And if you're on PC, just tap the Left Shift key. This should have your character gracefully (or not so gracefully) detach themselves from the jetpack. Happy landings!
