You can nickname your Eevee before evolving it to control the evolution! For example, name it 'Sakura' for an Espeon or 'Tamao' for an Umbreon. It'll work once per Eeveelution, so use wisely!

Walk Eevee as your buddy for 10km, and evolve it during the day for Espeon or at night for Umbreon. Make sure it's still your buddy when you evolve!
